    Great read capturing one man's love affair with all things bread. I read the cookbook from cover to cover and it read like a non-fiction work.

    Ken Forkish introduction and background set the stage for a deep understanding of artisan bread making. Who would have thought that time is a key ingredient in bread making?

    Never thought I would bake something with the name Poolish, I did and this has turned into one of our favourite recipes.
